Went with a pork butt instead of brisket for the first cook. Mustard and Famous Dave's Rib Rub. 5.46 lb butt.

Set at 225 degrees. Probe temperature appears to be accurate compared to my thermapen.

Will update as it goes along.

Also, let us know if your alarms work...

2.5 hour mark. Temperature holding steady at 225. Probe temperature at 122.

I forgot about the alarm so I just set the probe alarm for 130 and will let you know how that works.

Also wanted to comment about assembly. Video was great and assembly was straightforward and easy. I did have my daughter as a helper to attach the competition cart.

The probe temperature hit the 130 mark (now at 131) and no alarm sounded.

I checked my phone settings and everything looks OK.

I'm assuming this is an issue as "Blues1" specifically requested an alarm update?

Four hour mark. Temperature steady at 225. Probe temperature of 146. Still no alarm. ?

Wrapped it up at the 5:19 mark.

Stalled at 157.

Using Pit Boss Competition Blend Pellets.

Stalled again at 167 after the wrap.

So I decided at the 6:45 hour mark to up the temperature to 250. Probe temperature is now 173.
I would have left it alone but the wife and daughter want to eat before dark.

Pulled it off the heat at the 10:56 mark. Temperature was at 196. Again my thermapen confirmed the RecTec probe’s reading. Into the cooler for 2 hours and then?:
